|Last month I shot quail at a plantation. The birds were pen raised so I had every intention of keeping what I shot and giving my kids a taste of what we ate growing up.
2 dozen quail cleaned and thawed
Old Bay seasoning
Salt, pepper, and garlic powder to taste.
One piece (or half piece) of bacon for every bird.
Toss the birds in all the spices
Wrap and tooth pick the bacon around the birds.
Place in a baking pan and let sit at room temp for 30 min.
Preheat oven to 450 deg.
Bake 20 min covered with foil
Uncover and bake til bacon starts to crisp.
Don't over cook or quail will be tough and dry.
Serve with salad or veggies.
