This is soooooo good that you have got to be careful not to eat too much or it'll hurt you before even know what hit you! It's damn sure hurt me, twice now!

All amounts in this recipe are approximate and should be adjusted to your taste.



Venison Asada
 
3 lb. venison, cubed
3 Tbls. chili powder
1 tsp. cayenne pepper
1 tsp. oregano
2 tsp. cumin
2 tsp. salt
1 tsp. black pepper
 
Mix spices and rub into cubed venison. Refrigerate for at least 1 hour.
 
In a pot suitable for roasting, brown venison. 



Remove the meat and sauté:

1 large onion, chopped fine
1 poblano pepper (or other for desired heat content)
2 cloves crushed garlic
1/3 c. peaches, chopped fine
1/3 c. crushed pineapple
1-1/2 c. salsa of choice
 
Add meat back into pan and stir.  Cover meat mixture with:
beef (or other) stock
 
Bake covered 2 hours at 300˚ checking periodically for liquid level (needs to cook down).  Heat may be reduced to 250˚ and cooking time extended.  When meat falls apart on fork-testing and liquid is minimal (you can cook it down on the stove) break up the meat into the sauce.

Serve:
Serve on hard or soft corn tortilla's as may be your taste.

We enjoyed the soft type that had been heated (lightly toasted) on a very hot lightly oiled black iron griddle.  (May also be served delightfully as a Tostada).

Add-on's...
Your favorite cheese blend (good extra sharp Cheddar is recommended), chopped fresh Cilantro, sliced Avocado or Guacamole, sour cream, chopped/sliced Valida onion and or your favorite salsa mixture. Of course, a frosty cold tasty “adult beverage” to thoroughly wash it all down is a requirement!

We were mighty pleased with the outcome of that recipe and found it to be the the absolute perfect thing to do with a piece venison tenderloin that had been hiding in the bottom of the freezer since last hunting season!

Just finished up the first batch of this years venison asada, I think I'm only about 30 seconds out from a totally stuffed, food induced coma! :roflmao:
