Stuffed peppers

Instead of using tomatoe sauce and crushed tomatoes in stuffed peppers,substitute green enchilas sauce and chopped green chiles.

With a pound of ground elk, I put the usual amount of rice in,1&1/2 cas of green enchilada sauce and two small cans of diced green chiles.Or I put in two cut up fresh roasted mediumg heat green chilies instead of the canned ones

When using ground beef I like to add some cheese into the blend use Parmesan, Asiago, Pecorino Romano cheese and sometimes i'll use Mozzarella add in on top just before taking out to serve just let it melt some. Use mushrooms into the mix with the beef and ( onions , like to pre cook them first with butter and garlic )

My wife makes stuffed peppers and tomatoes in a traditional Greek way, called gemista.

pretty basic but with some more "greek"-ish seasonings. I always add hot sauce or ketchup to the finished product for me.
